Enchilada Sauce

Enchilada Sauce

  • 6 cups chicken stock
  • 1 clove garlic; chopped
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • 8 tablespoons chili powder
  • 1/2 teaspoon garlic Salt
  • 1/2 cup white wheat flour
  • 1/4 cup oil

  1. Mix together all ingredients except flour and oil.
  2. Heat over medium heat until boiling.
  3. Mix flour and oil to make a roux.
  4. Add to sauce and stir until thick.

Yields 6 cups.
