Rollitos De Jaiba (Crab Rolls)

  • 6 1/2 oz crabmeat
  • 1 beaten egg
  • 1/2 cup tomato juice
  • 1 cup bread crumbs
  • 1/2 teaspoon salt
  • 1 teaspoon chili powder
  • 2 teaspoon prepared mustarrd
  • 1 teaspoon chopped parsley

  1. Flake crab meat and remove any bones.
  2. Add egg, tomato juice, bread crumbs, and seasonings; chill in refrigerator 2 to 3 hours.
  3. Form mixture into finger-sized pieces.
  4. Arrange on broiler rack over pan and broil 6 inches from source of heat, 5 minutes to each side.
  5. Serve with toothpicks.

Makes about 2 dozen.
