Spaetzle (German Dumplings)

  • 3 large eggs
  • 2 cup flour
  • 2 tablespoon butter
  • 1 cup milk
  • 1/2 teaspoon salt

  1. Beat eggs well
  2. Add remaining ingredients and beat until the dough blisters.
  3. Drop from the tip of a wet teaspoon, or force through a perforated pan with large holes into boiling salted water. Cook until tender (about 5 minutes).
  4. Drain. Toss with melted butter.

Yield: 4 servings
