German Potato Salad

German Potato Salad - 5 pounds red potatoes
- 1 large onion; chopped
- 1 teaspoon salt
- black pepper to taste
- 8 slices bacon
- 1 1/2 cups water
- 1 1/2 cups vinegar
- 1 cup sugar
- Cook potatoes in jackets. When cool, peel and slice.
- Salt and pepper the potato slices.
- Chop the onions and add to potatoes.
- Cube the bacon and fry in large fry pan until golden brown.
- Remove bacon bits from grease in pan, add water, vinegar, and sugar, bring to boil.
- Put potato mixture in liquid, stirring occasionally. (Add more liquid if needed).
- Add bacon.
Serve warm.
