German Potato Salad

German Potato Salad

  • 5 pounds red potatoes
  • 1 large onion; chopped
  • 1 teaspoon salt
  • black pepper to taste 
  • 8 slices bacon
  • 1 1/2 cups water
  • 1 1/2 cups vinegar
  • 1 cup sugar

  1. Cook potatoes in jackets. When cool, peel and slice.
  2. Salt and pepper the potato slices.
  3. Chop the onions and add to potatoes.
  4. Cube the bacon and fry in large fry pan until golden brown.
  5. Remove bacon bits from grease in pan, add water, vinegar, and sugar, bring to boil.
  6. Put potato mixture in liquid, stirring occasionally. (Add more liquid if needed).
  7. Add bacon.

Serve warm.
