Fish Fumet

Fish Fumet
  • 5 pounds fish bones; washed & gilled (white fish)
  • 2 large carrots; chopped
  • 1 celery stalk; chopped
  • 2 leeks; chopped
  • 2 medium onions; chopped
  • 1 cup white wine

  1. Sweat fish bones for approximately 4 to 6 minutes.
  2. Add all the vegetables (except the red peppers) and sweat.
  3. Cover with water and 1 cup white wine.
  4. Add a bay leaf, some thyme and black pepper to your taste.
  5. Simmer for 40 minutes and strain.
